Food writer Miriam Nice told me about a genius idea for making an instant version of cinnamon buns. She’d had a burger party the night before and woke up the next morning feeling a little worse for wear, and fancied a cinnamon bun. Surrounded by leftover brioche buns from the night before, she decided to be resourceful. Thinking along the same lines as garlic bread, and using a microwave, she came up with this – an instant, gloriously sugary and buttery cinnamon bun.

  • 1 unsliced brioche burger bun
  • 1 tsp softened butter
  • 2 tsp softened brown sugar
  • ½ tsp cinnamon powder
  • ¼ tsp cardamom powder
    (or the crushed seeds from 3 green cardamoms)
  • 1 Ryvita cracker
    (the regular plain ones)

Method

  • step 1

    With a pointed serrated knife (like a steak knife) and starting from the middle, cut down into the bun to make a spiral. In a bowl, cream together the butter, sugar cinnamon and cardamom. Using a spoon (so you don't accidentally rip into the bread), smear the butter mixture into the cuts of the spiral and all over the top and sides of the bun so it’s evenly covered. Put it on a plate and microwave for 30-40 seconds.

    Meanwhile, break off a corner of the Ryvita and crumble it up into a rough rubble (saving the rest of the cracker to either make more, or just to eat later on). When the bun comes out of the microwave, sprinkle the Ryvita crumbs over the top. Let it cool while you make a coffee, then tuck in.

Variation 

As an alternative, make cardamom buns. Swap the quantity of cinnamon for more cardamom and proceed as above, but instead of Ryvita, brush the top of the heated bun with marmalade before putting it under a hot grill – or even better, give it a blast with a kitchen blowtorch to caramelise the sugars. You can also sprinkle with smashed white sugar cubes to give the appearance of nib sugar.
